
On the menu in every Italian restaurant, Caprese Salad is the perfect summer time salad which is ready in minutes and amazingly simple to make!! It has fresh mozzarella and flavorful tomatoes topped with basil ,they all work together beautifully!!

Mozzarella cheese originates in Naples, Italy and it is both tasty and healthy, yes…healthier than you might think, as it is packed full of:
- Calcium , a mineral that is essential for the health of our bones and teeth
- A lot of vitamins like thiamine, biotin and vitamin B6 which are important to maintain healthy skin and vision and the formation of red blood cells.
- It is a good source of protein, which is important for energy and muscle maintenance.
Note: Quality of ingredients affects the outcome hugely so choose the best products available in market.

Type: Vegetarian Serves: 2
Ingredients:
- 2 ripe tomatoes, medium size and must be of very good quality
- 220 gm pack of fresh mozarella
- Good quality extra virgin olive oil
- 10-15 basil leaves (preferably small)
- Salt
- coarsely ground fresh black pepper.
- Focaccia bread to serve.
Method:
- Slice the tomatoes in round slices, slightly thick and put them in a bowl.
- Sprinkle them with salt and black pepper. Drizzle 1.5 tsp of extra virgin olive oil also and keep them aside for 10 mins to ‘pull out’ the juices, which will work as our dressing for the salad.
- Slice the mozzarella into round slices, slightly thick.
- Arrange alternate slices of tomatoes and mozzarella, slightly overlapping each other on a serving platter.
- Spoon over the juices which we have collected from the tomatoes, over on mozzarella and tomatoes.
- Spread basil leaves over and sprinkle with salt and freshly ground black pepper.
- Drizzle with extra virgin olive oil .
- Serve with focaccia to mop up the juices.

*Vine ripened small tomatoes and small balls of mozzarella can also be used to make this salad.

**Some people also use Balsemic Vinegar but I think it destroys the delicate flavor of cheese..feel free to try it.
