Masala Idli with vegetables
Masala Idli is quick snack made with leftover idlis, vegtables and fragrant spices!! An easy to make and delicious snack which can be served as breakfast, lunch or evening snack! If you are planning a get together , then this is the simplest thing to put together!! It tastes best when paired with a piping hot cup of tea or coffee!
Idli is made with combination of urad dal and rice which makes it a complete protein. It is fermented food which is easy to digest and it replenishes the micro flora of digestive tract and also improves the absorption of nutrients.
Moreover, the vegetables used in the Masala idli provide a lot of vitamins! Kids will love this colorful, healthy snack which can be made in less than 30 minutes!
Steps :

Ingredients:
- Left over Idlis: 8-10
- Onions: 2 medium sized, sliced thinly
- Green Pepper: 1 sliced thinly
- Red Pepper: 1 sliced thinly OR 1/2 red pepper and 1/2 yellow pepper (you can add any vegetables of choice)
- Green chillies- 1-2 sliced (skip if making for kids)
- Tomato: 1 sliced into thin slices OR Tomato Puree : 1/4 cup
- Oil: 2 tbsp
- Mustard seeds : 1 tsp
- Curry Leaves: 10-12
- Turmeric Powder: 1/2 tsp
- Red chilli powder: 1/2 tsp (optional)
- Sambhar Powder: 2 tsp ( available in most Indian grocery stores)
- Tomato Ketchup: 1/4 cup
- Fresh Coriander leaves: chopped 2 tbsp
- Chat Masala: 1 tsp
- Lemon juice: 1/2 tsp
Method:
- First of all, cut idli into bite size pieces. Do not chop finely. Keep aside.
- Prepare and chop rest of the ingredients and keep them aside.
- Heat oil in a non stick kadhai/pan, add 1 tsp of mustard seeds and let them crackle.
- Add curry leaves and green chillies, fry for few seconds and add sliced onions.
- Stir well and add sliced red and green peppers . Keep stirring.
- Cook on medium heat for few minutes until peppers are cooked. Don’t overcook them, they should be crunchy.
- Add sliced tomatoes (or tomato puree if using ) and saute for 1-2 minutes.
- Add turmeric powder, red chilli powder and sambhar powder and give it all a good mix.
- Add tomato ketchup and mix it nicely.
- Now add chopped idli pieces and mix it so the masala coats the idli pieces.
- Add salt and lemon juice.
- Sprinkle some chat masala, taste and adjust seasonings and garnish with chopped fresh coriander.
