
Millet Handvo Bites
Handvo is a Gujarati delicacy, a delicious vegetable cake made with a mixture of dals , rice and vegetables. I have used millets in place of rice. I used barnyard millet or Samo seeds. They have low glycemic index , high fibre and they are a good source of protein . Then vegetables like grated carrots and grated bottle guard are added . Spinach and fenugreek leaves can also be used or bottle guard can be replaced with courgettes/Zucchini . A tempering of mustard seeds and sesame seeds enhances the flavor of this delicious vegetables cake. It is healthy and very filling.
Handvo can be pan fried or can be baked in oven. I made bite size handvo in an appe pan. But you can make these in a thick bottom pan or easily bake in an oven.
Batter is prepared by soakingĀ the grains, grinding them and then fermenting over night. Since the weather is very cold here, fermentation can be time taking, so I grinded the grains with yogurt and used eno for rising.
