Avocado Toast with Eggs

Quick and simple,  Avocado toast with eggs is a delicious, protein packed breakfast/brunch or a satisfying light meal. Avocado toasts have become increasingly popular these days and can be found on the breakfast menu of a lot of restaurants, however, it can be made very quickly and easily at home.

It is packed with proteins, fiber and healthy fats and gives you lots of nutrition to start your day. Avocados are packed full of approximately 20 different vitamins and minerals as well as heart friendly monounsaturated fat.

Things you will need:

Avocados: Your avocados should be soft and ripe but not overripe. It should not feel mushy. Some blemishes in the flesh are OK but should be removed before mashing the avocado. Also, if the avocado is under-ripe it will be difficult to mash so choosing the right avocado is important.

Bread: I have used sourdough bread but you can use any bread you like. Multigrain or wholewheat bread works fine too. The bread should be thick enough to hold up the toppings.

Eggs: Th eggs can be cooked as per your choice. They can be scrambled, poached, boiled or fried. We like fried eggs.

Cherry Tomatoes: Roasting the tomatoes in the oven will sweeten and intensify the flavor. You can use plum tomatoes too.

Salt and Pepper: Freshly cracked black pepper works best.

Red Pepper flakes: To kick up the spice level a bit.

Lime juice: Just a tiny squeeze for the avocados.

Fresh coriander: To enhance the flavor.

Enjoy it straightaway as avocados can turn brown very quickly and the bread can get soggy.

 

Variations and Substitutions:

  • You can top the avocado with any herb you like, basil, chives, dill or coriander.
  • Drizzle the eggs with Sriracha sauce for a spicy kick.
  • Gluten free bread can be used as per your requirements.
